A guaranteed hit - just don't tell the guys about the artichokes!

Ingredients:
2 - 6 oz. jars marinated artichoke hearts
1 small onion, finely chopped
1 garlic clove, minced
4 eggs, beaten
1/4 cup fine dry bread crumbs
1/4 tsp. salt
1/4 tsp. each: pepper, oregano and Tabasco sauce
2 cups grated sharp cheddar cheese
4 oz. jar pimento
2 Tbsp. snipped parsley

Instructions:
Drain liquid from 1 jar of artichoke hearts and discard. Drain liquid from the other jar into frying pan. Add onion and garlic and saute. Chop artichokes into quarters. Combine eggs, crumbs, salt , pepper, oregano and Tabasco sauce. Stir in cheese, pimento, and artichokes. Add onion mixture. Pour into 9" square buttered baking dish. Sprinkle with parsley and bake at 325 F. for 30 minutes, or until lightly set. Cut in 1" squares.

I'm approaching the age of 40 from a lot of different directiions - especially from the middle and back side.

These were absolutly the BEST! I tried putting into mini- muffin pan as suggested by another reviewer and they weren't that easy to remove from the pan even though I sprayed it. The flavor is incredible! I tested these on my husband and he says "these are a winner""
I used 1 1/2 cups chopped artichokes from a large jar from Costco. I will make these again for Bunko and put into baking dish- maybe double and put into a 9 x13 pan because these will go fast!!

I have been making these as appetizers for many years and EVERYONE wants the recipe for them. They have become synonymous with our After Parties and Cocktail Hour paties! So easy - and they freeze well too. Serve warm or cold - if too hot, they're hard to handle with your fingers - but they make a delicious & unusual vegetable for dinner. Delicious!!

Everyone loved this for an appetizer, but mine did not get firm enough to cut into serving squares. Wonderful as a spread on crackers - but where did I go wrong on too much liquid someplace? Did not use the liquie that the onions were sauteed in. Excellent recipe otherwise.
