Our favourite classic cheesecake recipe.

Ingredients:
Crust:
1 3/4 cups graham wafer crumbs
1/4 cup finely chopped walnuts
1/2 tsp. cinnamon
1/2 cup butter, melted

Filling:
2 - 8 oz. (250g) pkg. cream cheese (use hard brick not soft product in tub)
1 cup sugar
3 eggs
3 cups sour cream
2 tsp. vanilla

Topping:
15 oz. pkg (425g) frozen sliced strawberries with juice, thawed

Instructions:
To make crust:
Combine ingredients and press into a lightly greased 10" springform pan.

To make filling:
Preheat oven to 375 F. Blend cheese, sugar and eggs. Add sour cream and vanilla. Mix well and pour onto crust. Bake for 50-60 minutes.
Serve wedges with strawberry topping.

Buffet: a French word that means "get up and get it yourself".

This cheesecake is by far the best dessert I have ever made - highly recommended

Excellent cheesecake. To make it even better mix a little sour cream and vanilla. Top each serving with a spoonful before topping with strawberries.
