This is really easy - definitely a family favourite! We called it Classy because it contains asparagus. The kids aren't always into "classy" - they like broccoli. Don't argue!!

Ingredients:
3 chicken breasts, skinned & boned
1/4 tsp. pepper
3 Tbsp. oil
1 - 10 oz. (280 g) pkg. frozen asparagus or broccoli
Fresh is even better
1 - 10 oz. (284 ml) can cream of chicken soup
1/2 cup light mayonnaise
1 tsp. curry powder
1 tsp. lemon juice
1/2 - 1 cup grated cheddar cheese

Instructions:
Cut chicken into bite-sized pieces and sprinkle with pepper. Saute quickly in oil over medium heat just until opaque (don't overcook - the chicken will get tough! Drain. Cook asparagus or broccoli until crunchy. Drain and arrange in bottom of buttered casserole. Place chicken on top. Mix together soup, mayonnaise, curry and lemon juice and pour over chicken. Sprinkle with cheddar cheese and bake, uncovered, at 350F (180C) for 30-35 minutes. Serves 6

It makes no sense to walk to the carwash!

This is so easy and good, perfect for the weeknight meal... i've actually bought a roasted chicken from the grocery store and made the recipe using that, steamed the broccoli in the microwave... SO quick and SO easy. my family loves it.

My mommy in-law makes this and it is SO delicious. She is a great cook!! She just sent me the link and I will make it tonight for dinner. This is a dish you could live off of!! That's how good it is...well when my mom makes it!

So Simple and so Good I make, sisters now make, friends make - I like to add a little more curry powder and serve sometimes with Long Grain & Wild Rice or with Jasmine Rice

This is a delicious chicken dish. It's fun and easy to make. Definitely a favourite in our house.

This is one of the best chicken recipes I have ever made. I buy the hot curry powder for a hotter taste. I have also tried using a tandori curry spice. Nice too! As a change, I have tried substituting fresh spinach for the asparagus. I have also tried mixing the cheese in with the soup as well as sprinking cheese on top. This is the absolute best recipe and my family loves it.

This is a fantastic recipe. I love it on rice too as another reviewer suggested. Almost all of the Best of Bridge recipes I have tried (and I have tried a lot)have been hits. I have all of the books but it sure was nice to find this website. It makes it much easier to find the recipe I want.

I have been making Classy Chicken since we lived in BC in 1987. When we came back to Australia it became my "dinner party" recipe and we still love it! It's so easy to make and always gets rave reviews.

This is delicious! Dinner time in my home is a hit and miss with the kids ( 6 yrs. & 3 1/2 yrs.) The only complaint that came from them was " it's all gone?????"

Love this recipe. Made it a million times - also taken to family and friends who are recovering from hospital, etc.
It is quick, easy, tasty and I've substituted sprinkle of paprika when those who don't care for curry (poor souls) are guest.
