Very moist. Great for the lunch box!

Ingredients:
1/2 cup margarine
1 cup sugar
2 eggs
1 cup ripe bananas-mashed
1 1/2 cups sifted flour
1 tsp. nutmeg
1 tsp. baking soda
2 tsps. hot water
1 tsp. vanilla

Instructions:
Cream margarine and sugar. Add eggs and bananas. Mix well. Stir in flour and nutmeg. Dissolve soda in hot water, add to banana mixture. Stir in vanilla. Fill greased muffin tins 1/2 full. Bake at 350 for approximately 20 minutes or until golden brown. Makes 24 medium muffins.

When you see a light at the end of the tunnel, it means there's a train headed your way.

I made these for my husband. He is swiss and has never had banana muffins before. He loves them!! I am now making them bi-weekly. And I have shared the recipe with my swiss friends!!! Thanks Julia

This has to be the best Banana Muffin recipe out there. I add chocolate chips and my children gobble them up! I also made it into loaves and brought a couple of loaves to work, and everybody wants/needs the recipe. Thanks Best of Bridge for this delicious recipe.....
