Apricots 'n Ham

Super for any buffet.

Ingredients:
10-12 lb. ham, whole, fully cooked
1 1/2 cups coarsely chopped dried apricots
1 cup finely chopped pecans
8 1/2 oz. can crushed pineapple, undrained
1/4 tsp. thyme
12 oz. can apricot nectar
1/2 tsp. allspice
1/2 cup honey

Instructions:
Have the butcher remove the bone from the ham. Grind up 1/2 lb. lean ham from the cavity. In a large bowl, combine ground ham with dried apricots, pecans, pineapple and thyme. Mix well. Spoon into cavity. Cover end with foil and secure with skewers. Cook any left-over mixture in a small casserole next to the ham. Pour apricot nectar over ham, sprinkle with allspice. Cover roasting pan with foil. Bake 2 hours at 325 F. Remove from oven and spread half the honey over the ham. Bake, uncovered for 30 minutes. Brush with remaining honey and bake 15 minutes longer. Serves 16 - 20.
