Baked Cheese and Tomato Strata

Worth the work!

Ingredients:
2/3 cup butter
1 clove garlic, minced
1 tsp. dry mustard
1 loaf Italian style white bread, sliced
3/4 lb. (365 g) grated Swiss cheese - or half cheddar, half Swiss
3 Tbsp. grated onion
1 tsp. salt
1 tsp. paprika
freshly ground pepper
1/3 cup flour
3 cups milk
19 oz.. can stewed tomatoes
3 eggs, beaten

Instructions:
In a small bowl cream 1/3 cup butter, garlic and 1/2 tsp. mustard. Remove bread crusts and spread one side of each slice with butter mizture. Line a 9"x13" baking dish with bread to cover bottom and sides, butter side down. In a large bowl, combine cheese, onion, salt, paprika, pepper and remaining mustard. Toss until well blended. Set aside. In a medium saucepan, melt remaining butter. Remove from heat and stir in flour, then gradually stir in milk. Heat to boiling, then stir in tomatoes. Add a little hot mixture to eggs, stir and pour back into saucepan. Stir.
Set aside 1/2 cup cheese mixture. In the lined dish, alternate layers of remaining cheese mixture and bread, butter side up. Pour tomato sauce over all. Sprinkle with remaining cheese. Refrigerate, covered overnight. Preheat oven to 375 F. Bake 45 minutes or until puffy and golden on top. Serves 8.
