Armenian Orange Cake

Fast, simple and absolutely delicious.

Cake Ingredients
  1. 2 cups brown sugar 500 mL
  2. 2 cups flour 500 mL
  3. 1⁄2 cup butter 125 mL
  4. 1⁄2 tsp. salt 2 mL
  5. 2 tsp. grated orange zest 10 mL
  6. 1⁄2 tsp. allspice 2 mL
  7. 1 tsp. baking soda 5 mL
  8. 1 cup sour cream 250 mL
  9. 1 egg, slightly beaten
  10. 1⁄2 cup chopped mixed nuts (walnuts, cashews, almonds) 125 mL
Topping Ingredients
  1. 1 cup whipping cream 250 mL
  2. 2 tbsp. icing (confectioner's) sugar 30 mL
  3. 1 tsp. grated orange zest 5 mL
  4. 2 tbsp. orange juice or Grand Marnier 30 mL
Cake Directions
  1. Preheat oven to 350°f (180°c).
  2. Grease a 9" (23 cm) springform pan.
  3. In a medium bowl, combine sugar, flour, butter, salt, orange zest and allspice. Blend with a pastry blender until crumbly. Spoon half into pan.
  4. Stir soda, sour cream and egg into remaining crumbs. Pour into pan; sprinkle with nuts. Bake for 40-45 minutes; cool.
  5. Remove springform and slide onto serving plate. Serve with topping.
Topping Directions
  1. Whip cream until stiff. Stir in remaining ingredients. Let stand for 1 hour to let flavors blend.
