Dressing
- 1/2 cup oil 125ml
- 3 Tbsp. red wine vinegar 45ml
- 1 Tbsp. fresh lemon juice 15ml
- 2 tsp. sugar 10ml
- 1/2 tsp. salt 2ml
- 1/2 tsp. dry mustard 2ml
- 1 garlic clove, crushed
Salad
- 2 Tbsp. butter 30ml
- 1/2 cup sunflower seeds, shelled 125ml
- 1/2 cup slivered almonds 125ml
- 1 head leaf lettuce
- 2 green onions, finely chopped
- 2 mandarin oranges, peeled or 1-10 oz.can mandarin oranges, drained 284ml
- 1 ripe avocado, peeled and sliced
Instructions
- Combine dressing ingredients in a jar, shake to blend. Heat butter in frying pan and saute’ sunflower seeds and almonds until golden brown. Remove from pan and set aside to cool. Prepare remaining ingredients. Add cooled seeds and almonds. Toss with dressing just before serving serves 8 to 10
