Ingredients
- 4 large baking potatoes
- 6 bacon slices, chopped
- 2 garlic cloves, minced
- 1 shallot, diced
- 1 cup chopped mushrooms 250 mL
- 1⁄2 tsp dried thyme 2 mL
- 1⁄2 tsp salt 2 mL
- 1⁄2 tsp black pepper 2 mL
- 1 cup shredded Cheddar cheese 250 mL
- 2 green onions, thinly sliced
Instructions
- Preheat oven to 400°F (200°C).
- Prick potatoes all over with a fork. Bake for about 1 hour or until tender. Reduce oven temperature to 375°F (190°C).
- Meanwhile, in a skillet over medium-high heat, cook bacon for 8 minutes or until crispy. Using a slotted spoon, transfer to a plate lined with a paper towel.
- Reduce heat to medium and sauté garlic, shallot, mushrooms and thyme for 5 minutes or until golden. Remove from heat.
- Cut potatoes in half horizontally and scoop flesh into a bowl, leaving a 1⁄2-inch (1 cm) thick shell. Mash potato flesh with bacon, mushroom mixture, salt and pepper. Stir in cheese and green onions. Mound mixture into potato shells and place on a baking sheet. Bake for about 15 minutes or until golden brown.
