This Oven-Baked Fried Rice recipe from Best of Bridge Everyday Celebrations is, hands-down, the easiest, healthiest and most delicious “fried rice” you’ll ever eat. This recipe is perfect for a buffet, a weeknight dinner, or packed lunches.

Ingredients
- 1 ¾ cups (425 mL) long grain white rice
- 2 cups (500 mL) ready-to-use chicken broth
- 3 cups (750 mL) diced mixed frozen vegetables
- 2 tbsp (30 mL) canola oil
- 2 tbsp (30 mL) soy sauce
- 1 tbsp (15 mL) hoisin sauce
- 3 garlic cloves, minced
- ½ tsp (2 mL) black pepper
- 2 cups (500 mL) cooked diced ham
- 1 tbsp (15 mL) toasted sesame seeds
- 2 tsp (10 mL) sesame oil
- 2 green onions, thinly sliced
- Sriracha
Instructions
- Preheat oven to 400°F (200°C).
- In a 13- by 9-inch (33 by 23 cm) baking pan, add rice, broth, vegetables, oil, soy sauce, hoisin sauce, garlic and pepper; stir to combine, then spread into an even layer. Sprinkle ham over top.
- Cover tightly with foil and bake 40 minutes. Remove foil and bake uncovered for 10 minutes to crisp the ham. Remove from oven and recover with foil; let rest 10 minutes to allow the rice to finish steaming.
- Remove foil and stir in sesame seeds, sesame oil and green onions. Serve with Sriracha on the side.
- Serves 6
Notes
- To make this a meal, serve with fried eggs on top. You can substitute the ham with cooked chicken, pork or beef. Use any mix of frozen vegetables; large pieces will need to be diced for even cooking.
